I made my first batch of Feta cheese last night. Pictured is the semi-finished product hanging to ripen and dry. Every time I pass by the sink I take in a big whiff of the delicious cheese. I can't wait until it's finished. Yummy. Tonight, I'll cut the curd mass into pieces and coat the pieces with salt. Then they ripen for two more days before they go into a brine solution in the fridge to continue ripening for at least a week.
I also made some dried onion slices from my harvest late last week. These are really handy when I am cooking a crock pot dish.
